Home-made Tomato Soup

Easy to make tomato soup! Use up those tomatoes you bought!

  1. Step 1: Preheat oven to 350°f
  2. Step 2: On a baking sheet add whole tomatoes, halved pepper, and the garlic with the pointy tops cut off.
  3. Step 3: Drizzle a little olive oil over the vegetables
  4. Step 4: sprinkle some salt over too
  5. Step 5: roast in oven for about 20-30 mins or until they get a little browned and garlic is soft (skin on tomatoes will crack)
  6. Step 6: Remove from pan and place all tomatoes, pepper, squeezed or removed garlic cloves, and the basil leaves into a blender
  7. Step 7: Blend until smooth, if using basil you will see the basil as little 'sprinkles'
  8. Step 8: I like to add back to a pot and add the heavy cream here. You can just serve it out of the blender and mix a little cream in too.
  9. Step 9: This will be a sweet and savory dish - the roasted garlic adds a wonderful depth to it!
  10. Step 10: Enjoy with crackers or GRILLED CHEESE!!
