  1. Step 1: Preheat oven to 350°
  2. Step 2: In the bowl of your mixer cream butter and sugar until smooth (about 3 mins)
  3. Step 3: Beat in egg and extract(s) - almond is purely optional I dont taste a difference with it
  4. Step 4: in a seperate bowl combine with a whisk baking powder salt and flour
  5. Step 5: Add about a 1/2 a cup at a time to the wet ingredients.
  6. Step 6: *IF the dough looks crumbly keep mixing for 30-60 seconds longer. The dough should be pulling away from the sides of the bowl of the mixer
  7. Step 7: If the dough is too stiff pull out of mixer and turn out on a lightly floured countertop may need to wet hands to finish kneading
  8. Step 8: Divide into workable batches (2-3 chunks)
  9. Step 9: Roll out onto a floured surface - keep the dough about 1/4 inch thick
  10. Step 10: Bake at 35° for 6-8 minutes
  11. Step 11: Let cool on the cookie sheet until firm and then transfer to cooling rack
