Potato pancakes
Spice up your leftover mashed potatoes!

Ingredients
- left over mashed potatoes: 1 cup
- flour (divided by halves): 1 cup
- Additional seasonings to taste: any
- butter: 2 tbs
Instructions
- Step 1: Take the 1 cup of leftover over mashed potaoes and add 1/2 cup of flour
- Step 2: Mix well until a dough forms, if the potatoes are thinner mixture add more flour
- Step 3: If adding more flour do about a tbs a time from the other 1/2 cup.
- Step 4: Once you have a firm dough and can easily shape in your hands (some residue on hands is expected) you can start making
- Step 5: Melt 2 tbps o butter in a pan
- Step 6: flatten your ball of dough into a pancake shape
- Step 7: Once butter is melted and pan is hot but not smoking.... fry on each side until golden brown
- Step 8: Top with salt and or pepper and even ketchup!
