Ingredients
Potato: 4 ~ each one is about 3 fingers width thick
salt: 3 tsp (to taste - coarser salt may need more.)
pepper: 1 tsp
olive oil: 2 tbsp
smoked sweet paprika: 1 1/2 tbs
garlic powder: 1 tbs
Instructions
Step 1: Preheat your oven to 425 degrees Fahrenheit. Optionally line a rimmed baking sheet with parchment paper and set aside. OR use a large pizza pan unlined
Step 2: Wedge the potatoes. Cut long ways in half then half those halves. Lastly half the now quartered potatoes. They wedges cook best about a finger width thick. One potato gets 8-10 wedges.
Step 3: In a large bowl, mix together the potatoes, olive oil, and seasonings so that the potatoes are well coated. *mix in some grated parmesan too!
Step 4: Place the potatoes on the prepared baking sheet with the skin side down. Baking them this way will keep you from needing to flip them half-way through baking.
Step 5: Bake for 25 minutes or until golden brown.
